Strolghino salami – Riserva Sant’ Antonio

The Strolghino salami is a specialty from Parma, a “sweet” and very low-fat salami. It can have a relatively short curing time of 15 to 20 days, resulting in a very tender product resembling fresh, raw sausage meat. Authentic strolghino has been described as being prepared only in the plains of Parma, by the producers of culatello prosciutto.
