Rillettes are pure meat products. Recipes can be found in the oldest cookbooks and they are somewhat comparable to crackling malt. The bacon that is not pressed after melting and in which small meat pieces remain.
The comparison is partly valid, but rillettes are pure pork and pork fat. The pork is simmered for several hours in its own fat and juice to obtain a stringy whole that melts in the mouth.
