With its beautiful, intense red colour, this wine has very fruity flavours with accents of the acacia flower, pepper, cinnamon and liquorice on a long and velvety mouth. This red wine is very long and fat on the palate with well-balanced tannins and a long, soft and velvety finish. This wine has a lot of character. A complex and spicy wine.
The wine is produced from the grape variety Mourvèdre. It is grown near the Mediterranean Sea in the Pays d’Oc, near the town of Narbonne. The vine, 15 years old, is pruned in “Cordon de Royat” and planted on clay-limestone and schist soils.
Approximately 2/3 of the mixture is subjected to a very long maceration until the end of alcoholic fermentation. The remaining 3rd undergoes a carbonic maceration, i.e. maceration of the whole grapes. A small part of the final blend is aged in oak barrels.
Served at 17° – 18°C, this wine is excellent for meat, game, grilled lamb with herbs and goat’s cheese.
