La Leyenda is a cheese producer in La Mancha, the area known for Manchego cheese. It is made in the same way as a young Manchego, but with dark veins of summer truffle, criss-crossed through the inside of this beautiful cheese. This cheese has the classic nutty, buttery flavours of a fine sheep’s cheese, combined with the warm earthiness of truffle.
