Parmigiano Reggiano is the oldest of all Parmesan cheeses. Only after two years of maturation may the cheese be cut. The result is a hard cheese with an intensely powerful, spicy flavour. This already grated Parmesan cheese is therefore very tasty for gratin dishes. It is also ideal for sprinkling over Italian dishes, such as pasta.
