Parmigiano Reggiano is the oldest of all Parmesan cheeses. Only after two years of maturation may the cheese be cut. The result is a hard cheese with an intensely powerful, herb-like flavor with a grainy structure whose crust is edible. Perfect for rasping, but also delicious with a good glass of wine.
