Crispy. Roasted. Nutty. Dukkah is an oriental spice mixture that originated in the royal land of the pharaohs. The term comes from the Arabic (duqqa, dukka, du’ah or do’a) and means “the crushed”. The name already tells its culinary story: fine-grained sesame seeds and fresh nuts are coarsely chopped, pounded in a mortar and roasted until they crackle golden. Popular oriental spices such as black cumin and coriander seeds provide the full flavour – rounded off with a fine pinch of sea salt from the Camargue and Indian Tellicherry pepper.
